Whenever you sell equipment to certain merchants, there is a chance for them to pass the item into the Vokihar or Dawnguard 'possible items' chests. Whenever a leveled Vampire or Dawnguard loads, it has a chance to draw one or more items from the chest.

Named characters added by the Dawnguard DLC (such as Harkon, Isran, Ronthil, Gunmar) will not draw from the chests; only the leveled NPCs will. This preserves those character's original outfits, or the effects of any mods that change their outfits.

In addition, Volkihar items are also available to leveled Vampires throughout Skyrim. Now, when you delve into a vampire dungeon, you may find them equipping items you've sold to a certain blacksmith, even if you've never been to Volkihar Keep...

As well, the Vigil of Stendarr will also draw from the Dawnguard faction chest.

In effect, this enables the player to better equip either (or both) sides of the Vampire war. Sold goods to one side will appear as random equipment for them. It's possible to focus on selling to one side, or arm both sides to reap a bloody harvest!

Dawnguard prefer heavy armor, and will accept and wield one-handed weapons, two-handed weapons, and crossbows. Volkihar prefer light armor, and will wield one-handed weapons and magical staves.

I think you'll find this adds an interesting strategic dimension to the game.

IMMERSION

Sell armor to Balimund in Riften, and you'll see more members of the Dawnguard wielding exactly what you sold. This makes for satisfying smithing, as you can outfit the Dawnguard with powerful weapons and armor to better fight against the Volkihar clan.

It also applies to Rustleif in Dawnstar, whose iron is mysteriously winding up in Vampire hands. Likely, the wares are being bought up by some mysterious middle-man, and smuggled to vampires throughout Skyrim. Beware what you sell to him, as it may come back to bite you.

As well Volkihar Keep and Fort Dawnguard have two merchants each who contribute to their faction. By selling to your faction's merchants, you can be more sure that the items will show up equipped by your faction.
