"Caviar spread" (Icre) is a traditional Romanian delicacy that often appears on holiday tables such as Christmas or Easter. The process is similar to making mayonnaise, but instead of regular eggs, fish roe is used – these are premium fish roes!
Preparation involves slowly adding oil to the roe until emulsified, often with some lemon juice and soda water. At the end, most people add finely diced onion and stir well.
