This isn't my fix, but it is said to work.

The textures are not displayed correctly (the mesh is covered with different colored lines instead of the texture), you need to go into skyrimprefs.ini in /documents/my games/skyrim and look for the line "iTexMipMapSkip=1" under display. If you have this line, change the 1 to 0 and this should solve your problem.
