While holding the pelt/animal (default keys E&X/Square on the controller), press and hold the "Stow on Wagon" prompt near the hunting vehicle (back). You can only do this from the hunting wagon in your camp. It doesn't work on other vans.
Known issues
The stuff you put in your safari car hasn't been stored yet. So when you reload the game or die, you lose the items stored in the carriage.
There is no throwing animation.
The physical properties of the fur/animal may mess up the carriage and cause malfunctions. Especially the big birds.
When the wagon is destroyed or no longer drivable, and you are far away from the camp, you must move closer to the camp before the wagon spawns again.
Install
Install the latest ScriptHook RDR2 Copy dinput8.dll and ScriptHookRDR2.dll and place them in the root of the Red Dead Redemption 2 installation folder.
Install the hunting wagon by extracting Hunting_Wagon.asi and placing it in the root of your Red Dead Redemption 2 installation folder.
