Sure sosigs are just tubes of meat but it's the thought that counts.
To use stab a sosig, press down on the trigger, and press back and in on your touchpad/joystick, then wait until the display reads 255 and the completed sound plays. If you take the knife out too early you'll get a failure to hack

安裝與使用 安裝：BepInEx 外掛
